Company Description
Company History
At the Height of the lechon manok craze that swept the nation in the 1980s, when it was practically impossible for the ordinary citizen not to see competing, lechon manok kiosks at any given day, the couple Dwight and Dolores Salcedo were looking for as new small venture to starrt in order to earn a little more so they can make ends meet.
Owing the political turmoil at that time, it was a difficult time for everyone. Even while the Salcedos had regular day jobs, and a small business on the side, they were still in search for a new opportunities to earn for their young family.
Thus, in November 1985, they pooled five thousand pesos from their savings with another five thousand pesos borrowed from their parents to put up their own lechon manok kiosk in Project 8, Quezon City. This, as it turns out, was to be the first of many kiosks that would become one of the most outstanding success stories in the Philippine business - Baliwag Lechon Manok.
Having no educational background in both business and culinary arts, at first glance, the Salcedos' epic journey to success in the food industry defies logic. However, their formula is simple. And it makes a lot of sense.
Why the name "BALIWAG"?
The name itself speaks highly of the principles that they espouse. Baliwag (Bulacan) is Dolores' hometown, and for her, the mere utterance of the name of her beloved town evokes true Filipino food and hospitality. "If the name can have that same effect on the ordinary Filipino, we thought that we stand a good chance of succeeding," she thought.
How did the recipes come about?
Even their recipes are homegrown. Without the resources to hire a professional chef, Dolores enlisted the help of a cousin who was known for his knack for cooking Filipino cuisine to come up with the recipes for the original fare - lechon manok, liempo and of course, their legendary sauce.
After going through intense scrutiny by both relatives and friends, these recipes were further improved, with each dish fine-tuned to accommodate each critics demanding palate.
It is this sense of commitment to quality that has allowed Baliwag Lechon to grow and become an iconic Filipino brand in just a few years.
Baliwag Lechon Manok has long been a favorite for celebrations including weddings, birthdays, anniversaries, graduations, and even when we welcome back our balikbayan family and friends. Committed to provide the most delicious meals for the whole family, it is, by any measure, a success.
